Food Porn

I never like to come home empty handed..
Chanterelles, horse mushrooms and a couple of small parasols.
I cannot tell the difference between all of the mushrooms I see and fear picking the wrong ones. Last time I found some lovely looking mushrooms out stalking by the time my forager mate replied that they were excellent and edible, I'd left the area and was on my way home :doh: Next time, I'll pick them!
 
Simple, but this was delicious.
Red fillet (true, not loin) pan fried and rested. Reduced venison stock and glass of red wine to thick consistency, seasoned, finished with lump of butter.
Linguine cooked, then tossed in butter and a small amount of fine parmesan
Venison back in to pan and sauce spooned over.

We sent this Belted Galloway steer to slaughter on the 7th March, this was the last rib joint that has now been hanging in our chiller for 214 days. This is the longest we've ever aged our beef. It was exceptional, such a rich and complex flavour, more like a cecina than fresh beef.

10/10, would recommend.
