Any body know if smoke house at Galloway are taking any deer,also why have some of the large dealers stopped taking any
 
Have you tried eating cuts if it from a rutting stag, by any chance? We’re not so big on eg smoked salamis (where much of the taint can be ameliorated/diluted when the meat is mixed in with a higher percentage of pork) here in the UK when compared with eg Germany (where they used to be consigned to for mostly this purpose), nor is there much demand for that type of venison from chefs with any sort of reputation they’d like to keep, not that many establishments are back up to speed yet in any event.

I’d put it down to supply and demand.
