Does anyone have a haccp plan using a overhead winch for unloading there vehicle and also used for skinning cheers
 
Sounds like more of a Risk Assessment area than HACCP. All potential contamination from equipment used is covered in my HACCP but not dialled down into any particular item a such
 
I understand it as it’s risk just wandering how it should be worded
As Grand Slam said, it's not a HACCP issue, more of a manual / mechanical handling risk. HACCP covers risks which introduce contamination / pathogens.

The risk of using a winch is one of dropping the load, electrocution, snapped cable etc. They are risks to you not the carcass.
