Hare recipes?…🤔

Hi folks, I was lucky enough to take part in a driven hare shoot on Friday last week.

That was a real treat as down here in Kernow hares are indeed a very rare sight with only a few very small and sparsely distributed populations.

At the end of the day we were offered hares to take home. Of course curiosity takes hold and the butcher in me couldn’t refuse.

I plan to make something for the pheasant syndicate elevenses next Sat

Does anyone have any particular tasty recipes for Hare?

Do you have a mincer and sausage filler attachment?
Hare + Belly Pork + Garlic + Smoked Paprika makes absolutely fantastic Chorizo type sausages.
If you don't have the sausage filler but have a mincer the mix would still make very good burgers.

You could also make it into meatballs and add them to a casserole.

So just in terms of quantities, a dressed out hare is about 2 kilos. So it's a substantial meal, it's about 3 or 4 pheasants, or a big haunch of roe.

Turnout most weeks is around 30x so that is welcome news
