With the wildfowling season upon us I plan all being well to get some duck for the table. I've never ate wild duck before let alone cooked it so I'm wondering if anyone would like to share their favourite recipe or rub?

I'll do this with heavily shot birds and early wigeon, but it's a waste of a teal, in my opinion. Enjoy your season.
 
Cant go wrong with classic, doubt id put a rub on one tbh.
More a fan of confit legs and a pan seared breast with some cherry sauce or pickled red cabbage etc.
 
And duck pancakes like @pob said.
Suppose then you could do a light rub of star anise, cinnamon etc or just a generic chinese 5 spice.
 
There is also the opportunity to air dry some duck breasts after curing them in a sugary, aromatic brine, good for tougher birds.
