Muntjac tunnelling knife

Sorry I've read this like 5 times and am so confused

I've learned the tunneling way but plan on trying what I keep seeing on here. the make a slit twixt tail and bum pull it out and cut it while it's outside so am trying to understand


But when I read this its like you cut the rectum twice am I missing something

First push pellets out of the way and cut the intestine (and tie it I assume)

Then later hooking it out and cutting it

I cut through the intestine from the inside. If you push the pellets down you can cut on the empty section and none fall out. You could knot it if you want. You then do the rear as in the roe deer guy’s photos above. It means you don’t have to tunnel and your not pulling the rectum into the animal. Also it means your knife only goes near the rectum after you have done all the internal work.

I now hang on a hook from one leg. Open stomach and find lower intestines. Push the pellets up and down to make an empty stretch. Cut in the middle of the empty stretch. Straight down through the chest and neck. Cut diaphragm and pull everything down. Single horizontal cut between a-hole and tail. Finger in through the cut to hook out the intestines, pull out and cut off. Repeat withe pee pipe and bladder. Seems to keep me and the carcas pretty clean. It took me a while to get the nac

Not entirely. I only cut the intestine once so am trying to work out what the second one is doing

But I think I just need to try it and it'lll make sense when I see
I’m doing a suspended gralloch. First cut is to open the stomach from sternum to pizzle. I reach inside and find the lower intestines I push the pellets down untill there is a good clear length and cut through at this point. I can then split the sternum and keep going along the neck all the way to the head. Cut the diagphram and pull everything out. Cut head off and take the air and food pipes with it, no need to cut through these. Then all that is left is the bladder and a short length of intestine. Working from the back make one horizontal cut between tail and anus. Poke your finger in, hook the intestine and pull it all the way out. Once it is out you cut it off taking the anus with it. You can then hook the pee pipe out and it will bring the bladder out.

The second time you are not cutting the small bit of intestine off the anus you are cutting it off with the anus and I was just being dumb

I assume when I try it, it's all gonna work beautifully. I guess pulling the intestine out means I can just slice the anus off rather than going round like you have to when it's still attached internally or something like that

When you have done rabbits how do you go about them ?
 
I use a muntjac blade by Danum which are exceptional blades, but Smyth blades in Ireland made a very nice small muntjac size knife as per pic, you don’t need a large blade a smaller blade will do most if not all species, except bleeding a red/fallow, kydex sheaths as well 👍IMG_6510.webpI’ve had them and are very good quality at a reasonable cost as well
 
Some muntys can be a bit too small to remove cleanly without damaging/emptying the bladder. So nowadays I just knot the intestine, remove the rest of the gralloch and then remove bladder, rectum and anus when I get back home by splitting the aitch bone before it goes in the chiller. A lot less faff than in the field
 
I find with muntjac on a hanging gralloch if you pull down on the tail to tighten the skin you can cut down one side around the anus to the tail then cut across the tail as above. Makes getting your finger in to scoop the pipe out and finish the cut much easier.
