Choice of boot very much depends on the ground you are stalking on. Stalking over rough hill country is very different to leafy woodlands in summer time. For mountain use I would go with a stiff 3/4 season boot, stiff enough to take a crampon - not that you will be using crampons very often (yes I have used them winter stalking when lots of hard frozen snow on the ground - make you very sure footed when dragging beasts of the hill, but too noisy for the actual stalking bit), but the stiffness is required to support your feet and ankles when on the steeper ground - I have a pair of Scarpa Manta's that are now 14 years old and have been resoled once. All our feet are different and different brands have different shapes.
Fow lowland farmland type use, in the summer time I use a trainer type walking shoe - light and quiet, or if the ground is wet an muddy, I use wellies.
