Hi from Canada...
Love reading the stories of the stalking...have questions about what some of the abbreviations mean. Please explain:
1- what is an approved witness and what do they do? Are they a guide?
2- what does the DSC1 and DSC 2 stand for?

DSC = Deer Stalking Certificate
AW = they witness that you meet all of the key points of the awarding criteria for the DSC 2 cert. Things like rifle safety, stalking to a sensible distance, shot placement, inspection, gralloch etc .

So does that mean when a person has a DSC they can stalk deer unguided?
DSC is a voluntary qualification. There is no requirement to have DSC1 or 2 in order to stalk, either accompanied or unaccompanied.
However, some landowners or people running syndicates etc may require leaseholders or syndicate members to be suitably qualified, and it may be required by some employers if you're applying for a job in deer management.
