No chiller but aiming to be self sufficient.

We did 'American gutless' all the time in NZ, works really well and pretty straightforward. Friend of mine was in a similar position to the OP when he lived in Central London and worked it out in exactly the same way, seemed to work for him.
I must admit I do like it. Very little meat is wasted and the majority of nutrients go back into the earth to allow the next generations of plant growth to prosper and produce more food for future generations of beasties.

Taking out all the bits that will end up in the bin and then landfill just feels wrong to me.

Yes by all means recover the beast entire if it is easily accessible and is going to be sold. But walking off the hill to go and fetch the argo that will burn lots of fuel so you can bring the whole carcass only to then chop it all up and then take all the bits back on the hill somewhere makes not a lot of sense.
