I like 17* for knives. I know it’s supposed to blunt quickly at that angle but I find it the opposite. Use it on my daily pocket knife as well and it holds its edge very well while still being able to shave with it

Whatever you do DON'T motorise it ! Use it wet and run it slow. The instant you manage to get the knife edge hot enough to 'blue' (or even change colour to 'straw') you'll have killed the heat treatment and ruined the thing.
