Red deer has a very irony taste I adore I cant quite put my finger on what's wrong with roe? I can eat it but when I'm not eating half of my serving there's obviously something about It I dont enjoy.
(About 45 minutes ago I picked up iron pills to treat my anaemia... no wonder I like the iron taste!)
When it comes to venison I think its more important to have something young and head/neck shot and bled straight away and hung for at least a week at 2c then I don't care what species it is it's all good. I also leave the skin on until the day before butchering.
