Scott Rea. Complete and utter git.

im certain he isn't going at full pace for his videos
He generally isn't, but did do a video of butchering a roe a few years back at full pace, called:
  • Butchering A Deer In Real Time
All in, the video is a little over 19 minutes, but that includes a preamble and a couple of slow-mo parts. So in reality, it probably takes him nearer to 15 minutes...

That's how I do it. I do use mole grips when skinning munties though as the skin hangs on a bit more that it does on other deer. Skinning this way certainly saves a lot of hair getting on the meat as the fur is below the exposed flesh so any loose hair drops to the floor.
The important bit is right at the start. You must cut the front legs off at the bottom joint or the carcass will fall on the floor when you start pulling on the fur.
Has anyone ever skinned a muntjac like that and left any meat on it?

With people commenting on how quickly he can break a deer down. It makes me think about the people that say there isn't any money in venison. What they should say is "there's no money in the way I do it". If you scale it up and have a big surply of deer and a skinner and a butcher or two and someone packing and contacts to sell large quantities. Believe me there is money to be made.
I have on multiple occasions been to places like this and much bigger and to watch the efficiency and productivity is amazing.
And the speed of a experienced butcher and lack of waste has to be seen to believed.
The biggest think I took away was why they ask for perfect head shot deer.
Slowing to trim damaged (bullet or blood stained) meat and then pay for disposal has a massive effect on profit.

My wifes Viz needs to post a vid on how to prep and eat a Munty in 5 mins.
My fault as I let it out but it could have left us more than the haunches.
