Steel pans

For some time I've been after a decent saute-style pan, one made of steel that I can get a patina on. I thought I'd sussed it with a de buyer, but the large pan is f'heavy. I have an excellent steel one from John Lewis which is perfect size, shape and weight in their "thermacore range" so I'm waiting to see how it stands up. Any thoughts.
(Having the perfecet pan is my version of the precise home load...)
 
What you are looking for is a carbon steel pan. De Buyer are good and the handles are riveted to the pan. Matter Bourgeat ate another French brand - they spot weld handles. Each has advantages and disadvantages.

I know debuyer do different ranges of pans - the weight all comes down to the thickness. you can also try lesser known brands - catering suppliers are a good bet such as Nisbets. Nisbets | Free delivery & click & collect available!
