Thoughts on a curing get together up north

Sorry, I've been a bit slow in organising this. I'll speak to the venue tomorrow and sort a date out, is November ok? Also, would a Sunday be better for the lucky buggers with game syndicates.

Hi gents, proposed location has fallen through due to it running coffee mornings all through nov. Going to speak to my local village hall today, not quite as good a kitchen but it'll do. Cheers Jonty
 
Ok chaps, how does a Sunday mid-late nov or early dec sound. Would be at Horton in Ribblesdale. If there is a general consensus on a best date il go with that or failing that just pick a date and whoever can make it, makes it so to speak. I can get the local village hall for about fifty quid so if everyone throws in a few quid just to cover the hall that would be great. If anyone is travelling i can put you in touch with some local accommodation spots from bunk barns to b&bs

I thought that maybe if I suggested some ideas of what we coud cure, salami, veni ham, bresaola etc, then everyone could bring their own venison and we could work out the cures and then you can cure your own meat. Also, bacon is a sure fire winner and salmon curing is a piece of pee too. Hopefully it could be a bit of a two way street with any one attending passing on any butchery/sausage making skills etc that they have too. I'd be happy to chat with anyone who wants to come so that we can cover anything you'd like to try. That way if someone wants to try something like salami,me can make sure between us we've got the kit such as salami skins etc

I would like to say that I'm by no means an expert or a qualified cook but I do know the ins and outs of curing safely and hopefully could make it into less of a dark art for you.
 
Brilliant. As of late I fancy myself as having become pretty good at sausage recipes and tricks on making it all work (having spent a while learning in anticipation of my first few attempts that turned out to be rather successful) so I will be more than happy to share my experiences. I would very much like to learn about curing and salami making, as I know nothing about. So count me in please, most weekends in November are OK with me at the moment.
 
Gents, I'm really sorry that this didn't come to fruition as suggested. My wife,s not been enjoying the best of health for the last few months so I've been heads down juggling kids/work etc and I dropped off the radar so to speak with no chance of having a weekend day to myself. My apologies for appearing unreliable, I genuinely aren't and would like to sort something out. Things are on the up now so how about a weekend in February after the game season has finished. If that sounds ok With people I'll speak to the village hall and get it booked.
 
Family and health are far more important than a bit of dried meat mate!! ;)

How does either the 21 or 28 of February sound? If either of those dates suit I'll finalise the booking and if you want to pm me for details etc. It'll only be in my local village hall, it's not a full blown catering kitchen but it'll do for what we need. Only thing I'd ask would be if we can all throw a few quid in to cover the hall, which would be no more than fifty quid in total to hire it for the day.
 
Ok shall we say feb 28th? If there are any takers please let me know and I'll book the hall. Also if anyone has any ideas as to what they want to do, let me know and if I'm not familiar with it I can maybe swat up before the day.

Basically it will be a case of bring your own meat and we will work ou the cures, go through the processes and then get curing.
