You can just put a meat saver pad over protruding bone ends. Gives better protection, and works out a bit cheaper than using two bags.Good advice

Dry your sausages for a day before packing

Then I'd use a standard Lidl /Amazon vacuum packing machine . Mostly much over much
But the thing that will make your life easier is buying the premade bags (20x30cm is a decent size)

You can make bigger or smaller bags off the roll when you need but it's a pain making every bag
Next step up from these basic machines is the chamber vac and it would be pretty rare you'd need one at home . But if you want to splash out the 300 quid sous vide tools version is a nice piece of kit when I used one a while back
