venison for xmas dinner

well we may have a new tradition in our house .....fallow haunch for dinner on xmas day .it was fabulous with super veg, enough cold for supper and boxing day .well done mrs norma excelled yrself :-D
 
Pot roasted haunch of venison in a red wine and redcurrant sauce, roast pots, mashed carrot and swede and all the other trimmings, bloody lovely !
 
Bit more skint than usual this year, so popped out the thursday before x-mas and rounded up a pheasant.
Never eaten it before, but removed the breasts and roasted them wrapped in bacon, served with all the normal veggies.
Very nice and it will be repeated, soon :thumb:

It really was "Kill it, cook it, eat it" for my wife

& because it's been so wet & muddly lately I needed help to carry it...& guess who I draughted in...yep the wife:shock:
 
Woodcock starters and venison in sherry sauce to follow, Need to figure out how to shoot a pudding for next year to do all 3 courses.
 
Well we had turkey, for two reasons,

1. My wife likes turkey and she only gets the chance to eat it once a year,
2. She said we can have venison, and do, whenever we want anytime of the year :-D

I made venison wellington for New Years day dinner. Not done it before but it went down a treat with the whole family.

I cooked Fallow Haunch rolled in Cocoa, roasted with Chocolate and Orange Sauce/Gravey, roasted beetroot, spiced red cabbage with orange, mash, 20 mins on high then 10mins per Lb nice and pink, great fun and went down well.
