hi today the wife did a ham which she glazed herself with honey and mustard, well it was lovely but I was wondering could you do the same with venison. thanks

Yes and if you don`t like mustard you can use the honey on its own or if you like mustard it goes well with Rosemary.

Or a mix of black treacle and water a la tom kerridge. Delicious on steaks marinated for a couple of days .

Honey or a treacle will take up a variety of herbs or flavours well, with the bonus of sticking them to the meat whilst cooking, i personally make a thick spiced red current jam for glazing venison.

My mouth is watering just reading this thread. Today Karen and I are finalising our Christmas holiday menus so this will go into the mix as something to try and fit in at some point.:-D
