Which large cal

Don’t over think it, I have a .243, a 6.5x55 and. .30-06,
I’d happily shoot anything in the U.K. with any one of them.

Bullet choice far more important, a well constructed and designed 6mm mono/copper/bonded would be a far better choice for big bucks and stags than a poorly chosen .30 cal bullet.
Bullet choice is the reason that if I had to choose one it would be the .30-06 I got it 10 years ago for my 21st and I’ve used it for everything from muntjac to moose.
 
Depends a bit on what you are ok with spending on your ammo and whats available. You'll not go wrong sticking to .308 or .270. Readily available, not too expensive, and either of those will take down a larger stag or boar at a fair distance. Driven boar get you a semi auto 12G with slugs or buckshot, and get an extended mag to be safe haha!!!!!!
 
As Acm says, don't overthink it.

They all go bang and if placement is correct they'll all do the same job and very little in it at typical deer ranges.

If you dont home load, nowadays, go with whatever calibre ammunition your local gun shop stocks in consistent amounts.

I've shot all sorts from muntjac up to PD with all manner of calibres and they all do the job well enough.
