Apparently you're not a proper stalker in 2019 if you don't use an Emberleaf at circa £400.00 so keep saving!

Yep, cut up many deer with a Mora knife, no issues there. 
Mora knife for me, own 3 or 4 and always have 2 with me when I'm out. There cheap enough, easy to wash, stand out in a field with the bright handles and easy to sharpen and keep an edge
Opinel 5" carbon steel, nice and thin on the back. £30.00 so you can loose 3 and be under your sub £100.
I use mine for the clean out, head and feet. I have a xl Norton 1000 grit stone which puts a very nice edge on it.

two carbon moras, and two i made out of an old file.
ESEE Cody Rowen 2.5 and reprofile it slightly so it is a bit more slicey. It is one hell of a strong thick knife for its size. A proper workhorse that feels perfect in the hand.
If you shop around you will find one for about £100. Carbon steel, so you will get a proper edge that will keep and if you use it regularly, it will patina nicely and build character. You can get a powder coated one as well but a bit more money. Good quality micarta, nice small sheath and can go in your pocket (I hate sheaths on belts personally)
If you are dealing with bigger deer, you may want something bigger but I prefer something small that cuts with a high carbon content.

Have I got custom jobbies??? Of course I have( I have an opinel no 9 and no 7 ( carbone)with red stag antler handles that a good forum mate crafted for my girls) I also have a cracker that can do red etc
A butter knife ground down and finished to razor sharp will do the job

I am surprised that people post they send their deer to be cut up by someone else who you have no idea how they treat the caucus in the time it is away from you!
Regarding sterile lots of people still on lead pipes, well water and cutting up the Sunday roast with bone handled steel knife.....
My understanding is a blunt knife is far worse a tool than a sharp one....
