hahaha no that’s just where I ripped the skin off in haste because it was about 27c out and I was rushing to get it in the fridge because I don’t have a chiller.
Interestingly ,our south east fallow are fat covered yes but not with that much.. I do wonder if it's simply a case of over population or poorer food resources for them ..We have them in 100 plus herds on the grazing all around the Ashdown area and that must mean more competition for food .

When I shoot a fat red stag early in the season I roast the haunch joints with the fat on but don’t typically eat the fat after cooking - which I would with beef
