What's your favourite deer meat?

As I'm sat here itching to get out and experience all that stalking has to offer I'm trying to put a list together in my list of what I want to go for giving I'm in it for the meat.

What's your favourite venison?

Fair do's . Bear in mind not all of us (probably most) will not have tasted all in your list. I have never seen a CWD or Sika never mind eaten any but a great poll none the less

Shot fallow and muntjac on the same day, blead, cleaned out treated the same. The muntjac back strap was far better than the fallow.

Yeah I've only had muntjac, but good to get an understanding of what people like, caveat with what people had the opportunity to go for so far. May even spark some to go for something else in the future

I think the problem with venison, just like other meats, is that it can vary so much. You can have a cracking beef sirloin steak one day, but the next one is, "average" !

Venison can be the same, but the two that had the "WOW" factor, and really surprised me, were CWD, and Sika. The flavour was just fantastic, and both very tender.

Border, those steaks look fantastic !

It’s venison it’s all good, I had sika/red hybrid a few years back it was very nice but it all depends on the animal, how it’s treated and how it’s cooked.

Should have added thats wrapped in foil to keep moist and a light coat of pork fat.It melts

I’ll have to try that

I sear them on an extremely hot pan, put them in the oven at 200 for 10-15 minutes, take them out and rest them wrapped in tinfoil.

Definitely Sika, saddle or haunch, but haven't got access now. Just have to make do with second best, Muntjac haunch for my lunch tomorrow.

Fallow buck mid loin chops pre rut/late velvet/just rubbed out/coming off a cereal crop. Hand sawn and cooked on a wire grill over redgum or yellow box coals.
Bugger I haven't got a pic of any Fallow chops cooking so the same grill with a pork belly on it will do.

Mostly eat roe and find it delicious, however find Sika to be the stronger more flavoursome meat that does remind me of well matured beef in its strength.

I've always found that the smaller the species of deer the tastier the venison, so it's Muntjac for me!
