Jose Souto is a stalker, renowned game chef, and teacher at one of the UK’s top catering colleges. Also the author of a couple of books on game butchery and cookery.
The date Jose has given me is Friday the 19th. So that's 10 days from now.
The tutorial will include:
Small-scale larder design and equipment;
Dealing with carcasses from point of shot onwards;
Skinning;
Initial butchery;
Advanced butchery;
Adding value;
Further processing and cookery.
And more stuff that I've forgotten.
We'll probably round off the day by eating the deer.
The teaching is demo based, rather than fully hands-on, but participants will be able to get up close and personal. Jose takes his time and goes through everything in fine detail, with ample opportunity for questions and discussion. All quite informal.
The price looks like being around £130 for the day, but that may come down if enough people want to come. The price includes a signed copy of one of Jose's books, either "venison" or "feathers". You choose.
We need a minimum 6 people if we're going ahead with it. Hopefully more.
