Waste should not be your problem except for stuff used during cleaning. If the dealer doesn't take, you don't want it. IMO you should make that clear from the start.
 
Just to throw something out there. I started work in a council run slaughterhouse in 1969, that had been built in Victorian times ( not many chillers then). We didn't kill massive numbers it wasn't run on a line system, everybody worked on the floor or cratches. The carcasses where pushed into the cooling hall which was a high ceiling store like building that had wooden slats/ vents that were open to the elements all year round. The only rule was to keep a gap about 9 or 12 inches between carcasses. The only time that the carcasses were put in refrigeratation was when they were delivered to the butchers that bought them, which could be 3-4 days after slaughter. By carcasses going into the cooling hall it did exactly what it was designed to do , they cooled down at a given rate which cut down on what they call cold shortening these days. Rigormortis took place and then the carcasses relaxed . As for the pay rate for tradesmen. Electrians, motor mechanics, plumbers £35.00-£50.00 per hour charged, butcher minimum wage and think yourself lucky.

I would hope that minimal waste would make its way to the larder - there is always some bits and bobs that come out of a carcass but I would be expecting people to bring as little as possible back. If nothing else why bring the guts all the way back?

There’s a lot that needs to be figured out but I think it’s worth giving it a decent effort

Definitely worth giving it a go. It's a great idea. I would hate to think that you opened yourself up to being a dumping ground for people's waste for the sake of a fiver, that's all. It's sad I know but people do take the **** and a few bits and bobs could quickly turn into 30Kgs of gralloch with every carcass! I would put it into the contract that any waste will result in an instant ban and no money returned. Leave nothing open to interpretation!

That’s why my larder isn‘t really for hire, I wouldna be too impressed by the efforts of many, the first guy I ever met with L2 offered me the worst dressed beast I’d ever seen (I rejected it, politely - well, politely for me, I enquired ’- but haven’t you got your level 2??’

Let’s just say my views on the methods and means of some are incompatible with offering out my larder for hire, I may take it a bit too seriously for many, even though I may be out of the game now - after the carcase has been dispatched, the memory lingers (’whaur did yon kern come fae??’)

I’d be worried about that and I’ve been in plenty larders where I have cleaned mine and the previous visitors mess up but we do need stuff like this to stop people moaning and hopefully facilitate some of those vaunted recreational stalkers to actually shoot some deer

Sure Dan, and I wish you every success in the venture, however it’s by no means clear that a lack of refrigerated hanging facilities is the main bottleneck in the equation these days, though I’ll be only too happy to be proven wrong in this regard all the same.

Absolutely right but it’s one that has come up over and again when we have been dealing with stalkers and trying to get people shooting more deer so it’s the obvious place to start.

There’s also the fact that it would be helpful to me which I should have made clear initially.
 
I really hope this works out for you and the local guys that will be able to use it, people do tend to let you down so as long as your prepared for that then there be no surprise. As for power cuts our chiller is wired in through a 4g alert plug it means that I text it everyday to record the temperature if for some reason I can’t make it over to look at it, it also texts me automatically if there is a power cut and again when it comes back on.

Have you worked out the cost yet?
A friend of mine just converted a unit, it was supplied with very little (and as it turns out insufficient) insulation and lined with plywood.
Total cost around £10k, for his own use, and butchering the deer to sell in his shop.
Other costs have been covered on previous posts.

My game dealer, the scales are linked to a label printer, linked to your own hunter number, it prints off the label, you stick it on your deer, details sent to a computer.
If you don't set something like that up there could potentially be issues.....label swapping.

I’ve shot far more deer since having my chiller and knowing I’m not tied to game dealer opening times, albeit I can only fit roe in. I’d be willing to pay what you‘re asking as it would enable me to take additional reds over summer, particularly if gamedealers could collect themselves.
 
I take it there is no estates locally or already setup larders u could try to use for a fee or something??
Would save on a lot of the expensive start up purchase costs.
