Hanging Deer Horizontally

What’s the consensus for hanging a red horizontally? I’ve got an opportunity for a refrigerator trailer which is ~1.8m height with plenty of length. Could hang horizontally by legs or construct a frame to hold an upright (standing) position.

Does anyone do this?
 
This is not a pejorative Q? I'm curious, what is the benefit from suspending a carcass horizontally, I have never observed one in that fashion, though I suspect if one were limited in head height it might have its place?

I don't think that there would be any benefit, other than that the OP is clearly short of headroom for hanging something as large as a red, which is presumably why he's considering hanging horizontally.

All the meat trade hang Vertically for a reason space! also you only need 1 hanging point against 2 also you would need a way to keep the 2 sets of hangers from being pulled together (spreader bar) and the carcass would want to bend...
And this and that....

Correct, headroom is the only reason.l. I’d be able to hang one or two which is all I would be looking to shoot.

Break it into 5/6 pieces and you will be able to hang them off stainless meat hooks if that is the only choice.
The US do that in there far away camps also others.
My friend shot 2 spikers and a 12 point with only him for getting them out, it was a cold night so into pieces and then in his chiller.

It’s hung to allow drainage whilst hanging pooling fluids can cause a hygiene issue
 
1.8m internal height? You’ll get reds in there hung from aitch bone unless they are monstrous lowland beasties. Mine is a touch over 2m internal and I’ve hung 100kg stags in there without touching the ground - pic below and could have got him higher if needed. 75kg hind is a doddle. Not sure where in S Yorks you are but I’m just over the border if you want a chat.

If height was the issue, you could cut the carcasses into two - say across the back of the shoulders that way you wouldn’t lose inner or outer straps leaving the front legs and neck for one and the straps/ racks and hind legs
if the carcase is a red/sika or fallow buck that’s still a weight to hang

my own personal like is to hang a carcase for 2 1/2 days in the chiller vertical, in all fairness I use Tims short reach gambrels for Muntjac and Roe to skin and primary cuts then butcher, it seems to have settled better I wouldn’t have thought hanging in two bits would change anything, I’d prefer that to horizontal to be honest as it allows rigor and drainage to set

each to their own, some have different ideals that they find suits them better - for me if I had to it would be 2 pieces max and a short gambrel

Have you ever tried to hang a red horizontally?

Don't bother = BALL ACHE!

Get a hanger off @Tim.243 it will save you heaps of room.

As detailed in the pic below, biggest one there is about 100kg larder weight.

There was a podcast on meateater with a "Meat Scientist" who said hanging the animal as complete as possible helps to tenderise it due to the weight of the animal stretching the muscle fibres so if you can hang from the aitch bone instead you may or may not get a better end product vs hanging from all four legs which I imagine would have to much support potentially

I don't even think I could hang a red or a large fallow horizontally getting it in position as norfolk deer search says I think you would have more than one ball ache after racking one up

the American way is to I believe hang a carcase head up on a single hook / gambrel through the jaw bone or front legs then skin then do the primary cuts from there, l guess less body tension than from normal back legs

much of a muchness really, dont think the deer would complain :rofl:

id agree with you, if possible with the space hung up to get through rigor then broken down into primal if space is needed but really wouldn't matter to the deer

Turn the trailer on it's end . any more advice don't be afraid to ask :tiphat:

You can 🙈 seen it done and I was the one who had to put it right!

Wasn’t a fun exercise

For the record, there are too many in in our world that should not be allowed near a rifle, let alone, a knife or a Larder!
