I'm curious, what is the benefit from suspending a carcass horizontally, I have never observed one in that fashion, though I suspect if one were limited in head height it might have its place?
All the meat trade hang Vertically for a reason space! also you only need 1 hanging point against 2 also you would need a way to keep the 2 sets of hangers from being pulled together (spreader bar) and the carcass would want to bend...What’s the consensus for hanging a red horizontally? I’ve got an opportunity for a refrigerator trailer which is ~1.8m height with plenty of length. Could hang horizontally by legs or construct a frame to hold an upright (standing) position.

I don't even think I could hang a red or a large fallow horizontally getting it in position as norfolk deer search says I think you would have more than one ball ache after racking one upThere was a podcast on meateater with a "Meat Scientist" who said hanging the animal as complete as possible helps to tenderise it due to the weight of the animal stretching the muscle fibres so if you can hang from the aitch bone instead you may or may not get a better end product vs hanging from all four legs which I imagine would have to much support potentially

the American way is to I believe hang a carcase head up on a single hook / gambrel through the jaw bone or front legs then skin then do the primary cuts from there, l guess less body tension than from normal back legs
