Does everyone “tunnel” the anus and other gralloch questions!

Anal tunneling a complete waste of time. Just ease pellets forward and backward out anus from inside pelvis… then break off tract internally
All I can say is I was shown how to do it by a guy who culls 100+ roe a year and as many Muntjac and it’s the work of a minute to do properly. No suspension, no split sternum or H bone and you end up with the entire circulatory, respiratory and digestive system on the deck outside the clean carcass for inspection.

Strange is it not, exact opposite up here in fact my game dealer will refuse to take them if not split and he is not alone goes for the majority of dealers North of the border.
Useful to know now I'm moving to Scotland. Down south though I was always told to make as small an incision as possible in the field to avoid contamination. I generally leave the head and feet on till I get home for the same reason. Not least because most of my carcasses are for my own consumption and I like to use the neck meat which is a lot more appetising when the stump isn't covered in grass, mud and fluff and grit from the van.
However, when in Rome.. If Scottish GD's want H and sternum opened that's what I'll do when I have to take one in.

I've seen carcasses in larders with bladders still attached. That's a no-no for me. I don't leave the bladder or rectal canal behind in rabbit carcasses, never mind deer.

Game dealer showed me some carcasseses he had hanging up with back passages and bladders only partially removed all were from a FC larder this was some thirty years ago hope they have improved.

They drop the category if the cavity is washed out too.
I think they get their policies from the revenue commissioners or the local planning dept, they’re always right, you have no appeal cos the evidence is gone and its a monopoly.
Ya just can’t win.
But its less trouble than digging all those 1M deep holes.🤷‍♂️
 
Watched as a colleague used a Roe buttout on a Muntjac, he soon realised it was a technique he shouldn't have started👿

Exposing the inside of the anal passage doesn't strike me as promoting hygiene so the buttout technique is flawed.🤠

A minute is a long time if the midges are bad lol

Way I was taught and did not overthink process but primary reason access to remove anal tract/ bladder and part of larder procedure with pluck removal and tagging, pizzle went on separate hook to pluck for mr Wong.
Tripes if kept left in bottom Argo😱 and washed outside larder and hung on fence near kennels to dry and fed to dogs.
In my early attempts in larder my fuhrer would inspect carcasses and oft comment “ I see the dogs been at them again”😂😂

Assuming suspended gralloch… sort back end, split the ribs, everything falls out. Then knife up the side of oesophagus to open all the way to the lower jaw - everything continues to fall out still attached to the head. Go behind trachea / oesophagus, follow line of lower jaw and cut through the joint in the spine. Head comes off still attached to everything. 👍
