Do you have to take the pizzel to the dealer

No, though some dealers buy them we are free to sell them as we wish along with tails sinews and any other byproducts.
Pizzels will.only.be purchased if the.bone is attached another reason for splitting the aich
bone.
As previous poster said two cuts for a male one for a female two cuts one eitherside of the pizzel leaves the bone.attached as required

Now tempted to go ultralight and use the following simplified combo;


One S hook is fine (see below)

Only issue is what happens when there isn't a handy hochsitz to hang the Roebuck on? (an "unsuspended" gralloch? Or as we used to call it "a gralloch")
At my age a "suspended" gralloch for a fat 60lb buck needs a spot of Archimedes lever/pully assitance
Anyway, I will give it a go and may report back on how I fair.

How would not towing the oesophagus mess things up?

If the deer had been sat a while post shot and you don’t tie then you can end up with rumen contents spilling out as you pull through

In the bad old days my gralloching training consisted of making sure the deer was laying headwards uphill so anything drained back and not out, didnt touch the external anus again un zipped it from the head to the rear end learnt how to split he aitch bone without popping the wee bag, split the rib cage and take the whole lot out in one from front to back in one hit

These days either just a field gralloch and finish off in the larder or full gralloch on the ground or suspended, still leaving the feet on, depending on the extraction whether a long haul the deer intact as much as possible if it's a short sled pull full gralloch top to toe head and feet off, but I don't leave any feet or heads on the beat, if required I remove all gralloch as well,on some ground due to dog walkers and public, no point in chancing your arm for a complaint

Also bonus question is there need to open mech and tie oesophagus if doing a suspended gralloch. I typically work bottom to head and pull it all down. Still fairly new to all this so just wanted to range check a few things.

There’s an easy way to ‘tunnel’ that doesn’t require a fillet style knife or furtling around inside the pelvis.

Make a horizontal slit directly above the anus. Reach fingers in, free off connective tissue around rectum. Pull out a loop, slice off, tie. It can then be pulled through when you do the main gralloch. Quick, clean, very easy.

Split the bone its easy to remove the back passage only time I tunnel is if I have had to leave a carcass out overnight (something I try to avoid if at all possible) leaves less to attract corvids.

Mystery to me why it’s not standard.

Every time I teach someone, there’s a moment of stunned silence, then a gleeful ‘if only I knew this x years ago’.

It’s the same with removing heads. Slit under chin down to spine, hand under chin, push head back til you hear a crack, run knife round from the ears, away it comes.

Two reasons , one. They believe it allows better cooling of a carcass and number two
Too often it's not correctly removed which results in carcass being condemned.
