Sharpening knives

To get best result i use the strop but that is unpractical when wee Butcher 2 moose in a day, as the hunting clubs knife guy(amateur smith) i usually maintain the blades for everyone. My routine is just hit the steel to realign the edge. When afterca few times The edge break off (normal after hitting the steel a bunch of times as you are basically bending the metal back and forth) its diamond rod, ceramic rod and a quick run on the strop then back to steel.

there are 5 of us haha. On my own i have done 2 roe a white tail and 6 hares. Took about 11 hours. Do you have a good setup for it? I have multiple game hooks and posts to the side to secure 4 legs at once. That way i can carve the meat off the bone without everything dangling around. For skinning i use an axe with a flaying poll. The rest is just skill wich develops over time. I butchered long before i started hunting.
 
Not a great set up but I don’t carve up the front end of roe or any other deer , that gets cut up for the dog as it saves on tins of dog meat , 2 haunches and 2 back straps and I’m happy and so is the dog 😁, I’ve actually stopped selling the roe to the dealer as it’s worth more to me and I swap it for lamb and fish from mates . I skin them right away as it’s easier as you know then there chilled for a week . We had a venison curry last week , first time in 40 years 👌

would love to barter that way. everyone of my neighbours shoots their own. And it seems my finnish neighbours cant apreciate my moldy charcutery
