Translate to Sun eggs

A "snack" from the southern part of Denmark
Hard boiled eggs brined in salt for a few days.
The color is from onion shells and gives a nice pattern on the peeled egg.

The yolk is taken out and you fill the hole with various condiments, to your taste, put the yolk on top and eat it.
And very importantly followed by a snaps (aquavit)
 
Picked this up today off ebay. £78 which is pretty good, especially as I was looking at buying the Aldi kamado in the special offers.

You may see it pretty soon being used as a tandoor or similar.

Interested in the recipe, specifically ' Southern Italian' rather than , I assume , there is a Northern Italian meatball version ????? can you clarify please ? ( PS looks fine though !)
I think its the chilli and fennel which make it more of a punchy Southern Italian recipe - no expert but they are absolutely lovely, worth the prep time. The recipe seems heavy on the salt and fennel - I've tuned back a little bit on the fennel a bit and make the balls smaller but thats personal choice.
