I chill deer skinless....not for more than few days but.far prefer it
I tend to hang in the skin. No particular reason though. I may well try skinning first. Thinking about it, it might well be the better way as you can trim and discard any damage early on 🤔

A good compromise I have found is to hang deer in skin, then skin them the day before butchering, just to let them dry off a bit and be firmer to handle.

Im not doing for week or longer ....just 3to 5 days on average
 
These two were fat! The amount of suet on them was pretty impressive, but they weren't so fat to have too much waste. I reckon the discard was maybe 20kg 🤔 They were set beautifully, too. Getting the shoulders off clean took a fair bit of muscle. Very nice carcasses indeed!
You need that set fat otherwise we find the whole thing is like a jelly will never come right

That's a good idea. For some reason I've left them in the skin until I'm ready to butcher. Your way sounds like a better method 👍

Right now, as we speak, I'm skinning deer ready for butchering tomorrow!

The weather is good which helps, as the humidity in the chiller has come down. When the humidity is high it doesn't seem to matter what I do - the carcasses are still a bit slippery to handle ☹️
One of the downsides of our maritime climate here.
