Knives are very personal - some like certain styles or types more than others, and it really depends on what you want it for... Keeper or user, general purpose (cutting meat & wood), butchery / skinning / both, cleaning under your nails... etc. You get the picture.
Since this is a stalking site, we'll assume you are looking for a knife to use whilst in pursuit of this fine tradition, so the first question has to be whether you would cry or not if you lost your shiny new sharp thing...
It's entirely possible to spend several hundred pounds on a single knife, but I'd suggest that unless you are independantly wealthy, a knife such as that would spend it's life in a nice presentation case in a drawer, and only get brought out on special occasions.
For a 'user' knife, you can stick to the very cheap, but practical and perfectly servicable, end of the market and go for a Frost/Mora or similar, as has been mentioned. You can then go up to to 20-30 quid mark and look at a number of the other options from Gerber, Buck, Fallkniven, etc - Nieto is another brand that I've found very good. There are many, many options in style and it will depend on what you mainly intend to use it for.
Past that, you may be entering waterworks territory - I know I'd be unhappy at the thought of losing a knife worth more than about £30 somewhere in a field or wood...
