Best knife sharpener

People's thoughts on the best knife sharpener out there. Ive tried a few now I've gone to the trusted steel. Mostly used for butchery many thanks.
 
I can vouch for work sharp they work really nicely, the only inherent problem Is the clamp system has a little bit of a flex too it (Its magnetic) though honestly my knifes end up plenty sharp with the overall system, I cant sharpen a knife on a diamond stone too save my life.

People however sell clamp supports on amazon if desired :)
 
I have tried stones and Lanky type things but as someone with two left hands i could never get an edge.
I bought an electric worksharp and, bingo, sharp edge all the time!
Problem was that I used it too often and wore the blade down quickly.
I have now invested in a ceramic "steel" with a angle guide on the handle and that does the trick, with only occasional use of the a Worksharp.

When you say “mostly used for butchery” do you mean that you want a sharpener that will keep an edge on a blade whilst butchering a deer?

If so, perhaps look at one of these:


Amazon have the F Dick Hyper Drill and the Bobet Sharp Easy, which are similar. The WartHog follows more or less the same concept.

I guess it’s partly down to whether you see butchery knives as consumable items - something to be used as a tool and then disposed off - rather than a work of art like a custom knife.

TBH the last thing I want to do when butchering a deer is haul out a Sharpmaker. WorkSharp, Wicked Edge or similar. Far quicker to do a few passes on the above or a regular steel. I’ll risk offending some by saying that, with my butchery knives, I’ll also occasionally use one of the Chef’s Choice style of sharpeners - they may be the tools of the Devil, but can be time-savers nonetheless.

Just printed by my son - all I wanted was the little black rest 🙄

That is the angle I use too - use the Worksharp & then strop to get a final razor sharp edge. Started stropping for the first time earlier this year & despite ‘normal’ use have not had to use the Worksharp since, a quick strop puts the edge back on again 👍
I’ve been using a cheap stropping board but I’ve just bought one of Peter Eaton’s board - class item 🤗
