Chiller temp fluctuations.

It may be the old thermostat was knackered and has been bypassed with a new one (hence new wiring). I don't think it's uncommon to do that.
Exactly this, and on an old Pepsi chiller I had having spoken with the late (and sadly missed) @sikadog, I replaced it with an MTC-1000A digital controller cheap off Amazon IIRC. Nice digital display, easy to install and set up.
 
I’m now using a tall single-door Coke fridge & it has held the temperature at a steady 1-2c, not changing if I’d got just one muntjac in there or a roe along with a couple of munties.
However, last week it decided to go up to 9c on full chill and resulted in me unfortunately chucking out two muntjac carcasses that were in there.
Any idea what could have caused this/how to fix it?

I think you’ll find that it needs regassing, and once you get this done your thermostat will ‘miraculously’ work just fine again. IME.
This tends to occur on a warm day ( check your diary!) and suddenly rather than gradually.
Ask a refrigeration engineer for an opinion to be safe, hopefully you have a tame one around who can assist.
 
After working fine for a while after cleaning out the fans etc, it's now decided that no matter what temperature I set it to on the dial, it's going to go down to -17c, which obviously isn't ideal. I've had a look at alternative thermostats and am I right in thinking that THIS can be used to replace the one I've taken out?
