Anyone else make there own venison mince meat? 3kg in less than an hour. Shared with family and friends. The wife made some fantastic burgers 🍔 and the kids loved them.
Any other good recipes for the rest?

Used to quite often mince the whole beast. Schwartz casserole sachets made it into interesting burgers, especially the mint lamb casserole mix.

Always just used an old bench mounted hand mincer.

Now I use the same mixes but with Halloumi or quorn mince. Just as nice really.

Chilli and venison fajitas are my families usual (along with burgers and sausages). I use mince to make jerky too. In fact, we use the mince so much more than the other cuts that I usually mince the whole deer or all bar the backstraps. Venison mince is generally eaten once or twice a week in our house.
 
Venison tandoor kebabs plus naan bread
The tandoor looks brilliant. I’ve made a pizza oven in the garden over the last couple of months, got some perlite leftover so planning to use it to make a plant pot Tandoor. The pizza oven runs at ~800C so I could just use that but the smaller tandoor might be useful.

this thread is tough, I’m doing an intermittent fasting diet and fasting today so food porn looks even more appealing...
 
Great tandoor. Can you get it really hot? How did you make it?

One large pot we had a tree in.
2 goid size pots, drill holes in the bottom of one. That needs to be raised off the bottom of the big pot so air can circulate.
Then cut the bottom off the second pot. Place this upside down on the first smaller pot so they are on top of each other. If that makes sense. Then put vermiculite as an insulator between outer and inner pots.

Simple and easy to do but ... roe sausage rolls 😋
Just sitting down after a hard day in her ladyship’s garden, the butler has just brought me a substantial Jura Journey malt and the upstairs maid is running my bath before my swedish valet, helps me undress for it - but I would give it all up for a faceful of those roerolls - they look delicious!
So ok they are all called Margaret but a chap can dream. Cheers chaps!!

That was some nicer parts ... defrosted two bags some bits thinking all back straps (pen rubbed off ) ... turned out not to be .. well one was .. so had some kebabs last night with mint and yoghurt sauce ... and then minced the rest added some sausage meat, parsley sea salt and black cracked pepper to season and made some sausage rolls ... not many left now 😁
