It sounds like it will be a very interesting evening.
If only it were just slightly less distant from me. Hopefully the same subject may be repeated some time in the future closer to home.
We aim to be finished by 10.00 pm,does that now tempt you ?

There are still some places left,it would be great if we fill it. As then I can justify possibly holding more events within the west midlands area. What sort of Best Practice events are people interested in the future please ?

Hi, I think there might be scope in both higher end butchery (making products, not just cutting the meat off) and the route of a registered food business- workshop? We all know dealers arent taking carcasses in the same numbers.

Alternatively, a post DSC2 Deer Management Course ?

Thanks for the feed back I really appreciate it,I am in discussion about a possible butchery course in the west midlands area.

If it goes beyond thirding a deer into primals, and deboning a haunch and taking loins off then Id be v interested.

I think most of us who have been culling deer for a time, can manage that already. A workshop to iron out any well-meaning untruths and contradictions in setting up a food business, possibly with any food handling course requirements would be immensely helpful
