Yes fella, I do it all by hand and eye unless it's a regrind job or similar. Then my 2x72 belt grinder comes into service before I set-to with the diamond hones and strop.
I usually finish to a convexed secondary bevel and alter the geometry of that to the sort of work the blade will be doing. A big chopping blade will need a much more obtuse and stronger edge than a gralloching blade etc etc. I've found over the years that a convexed edge is far more durable, as well as being easier for the user to maintain with a loaded strop. ( Lots of stropping will always result in a convexed edge anyway, so why not start there ?

Edges and their geometry for BladeSports is a whole science in itself as the blade has to cope with chopping through 2x4 timber (or 2x6), golf balls and the like and still be able to take the top off a drinking straw above the flexi/gator like bit, and no-one in the game is ever going to let on as to exactly how they set their own knife up for a competition
This was the year I came 4th in the Wold Championship with a knife of 01 toolsteel that I made myself. I appear just after the 8 minute mark.
