Afternoon All
I’m about to go down the shed route rather than convert the garage for larder purposes .
Start fresh with a dedicated set up, I will look to partition said shed ( 12’x6’ ) this is what I have to work with, so a chiller/ skinning room small but doable and the other room being for butchery/ processing etc both rooms lined with hygiene board and sealed plus floor.
I will be able to run mains to it as the garage has mains running to it and also do a hose run to feed the shed water wise .
I won’t be able to dig and plumb in drainage as that’s a bridge to far for reasons that are boring.
So my solution is to have two pits dug under both sections with large waste collection containers ( caravan types with wheels ) to receive waste water when cleaning down both rooms, has anyone on here done this or have had similar set ups ?
I won’t be doing full on figures but will be supplying butcher with carcasses out of skin also to third parties burgers, mince and cuts, any heads up to do’s don’ts and first hand experience of this kind of set up much appreciated.
I want and need this to be food business registered, acceptable .

I think the waste water (bits on floor included) will be your sticking point tbh, how do you propose to empty those out as it takes very little for a few gallons to come out of a hose and run down a drain.
Good luck :tiphat: but a week like this one which is quite hot things cook quickly.

My thinking is ( limited ) they would be 50L ones that you drag on wheels, so sat directly underneath and plumbed into the larder drain hole but can be detached to empty .
Reason I’m thinking to swerve actual proper drainage is I don’t think I’ll be able to get enough of a drop gradient wise on the run to our existing waste drainage, am I right in thinking there are certain specs that have to be met for this ?
I had thought that a possible solution to that would be to install a water pump so as nothing nasty is sat in the pipe festering . Thanks for the heads up on that issue .

What ever you do you will need to get it to your drain! Put a 5 gallon bucket under the out side tap and see how long it takes to fill up, that is half of your 50l cassette.
 
Just checking it doesn’t connect to the sewer drainage just waste water drain system ?
Now having a rethink about this whilst in prep stage .
So 1:60 and the run would be apprx 20m so apprx 330mm drop from shed to mains drainage ?

Needs to go into foul water drain, not rainwater. Depending on the age of the property you may have combined foul and rain.
 
60 in 1 fall for foul drain. 90 in 1 for storm water.
Like above a saniflow or similar float pump would be a good shout. As long as it's used fairly regularly.

It’s fairly old 1948 build, there are two open drains as such one definitely for waste water from kitchen .

Probably combined, but best to ask your local water authority to check. They get a bit upset if people discharge water with cleaning products into rain water drains as it goes directly into local watercourses.
Edit... just seen your location, definitely check as could be either, but the kitchen drain should be OK.

I have containers under the waste outlets from my larder. All approved as food premises, 5 star rating.

What volume are they and what sort of size larder are you washing down regards amounts of waste water, if you don’t mind me asking, thanks .
 
I have a larger than average (one wall runs out )double garage split into two with one side split into two again. One side is my larder one side is fishing and shooting storage. Anywho I have electricity and mains water, but like you waste was a step to far as nearest drain is in middle of my drive 10m way. I have 2 larder fridges, a 1.5m stainless table and another stainless sink unit with ample room for skinning butchering (albeit in the same room) I never suffer with hair anywhere though. Floor is vinyl with sit on pvc skirting and I also put a large fallow size tray under the hanging area whilst skinning. I have a caravan waste container under the sink which is more than enough for one or two animals before emptying into the drain.

I suppose it depends how many deer you need to do at once. Most of mine go to game dealer after being lardered at estate larder. With only a handful a season taken for my self and family etc at home- I haven’t registered as a food business but don’t see as being an issue if I wanted it to be.

Not sure if your building shed from scratch but consider SIP - structural insulated panels - they do kits or if your structure is simple just make your own design up.
 
Interesting that those issuing the 5 stars exhibited that level of interest in what at my reading is more a Building Control concern.

EHO inspector most certainly was interested in the drainage, and made it quite clear what she would and wouldn't consider acceptable.
