I hope you find someone suitable.
It's going to be the way forward I think, but so far people are put off joining up with other stalkers for fear they'll try to take over their ground. Well done you for trying to break the deadlock.

If someone close is struggling to get stalking I would dive into my pocket and buy a mobile larder if I was them. It could be the best money they have spent. It would also show a commitment to the partnership.

I have a chiller and have offered it up to several estates. The area we are in there is only one game dealer within 35mins The rest are at least an hour away but pay twice as much but need 10 to 15 animals to make a viable pickup. My concern is do I tag their deer with my tags or am I allowed to have deer from other sites in there if they are not mine

I think they'd have to be tagged by whoever shot them (or whoever was the "trained hunter" who supervised the shooting of them).
Apart from anything else, how otherwise would the game dealer know who to pay?

I used to use a game dealer in the borders.
We would turn up out of hours . Tag the deer write down tag number record weight also put are name DSC number and place shot.
Then collect cheque next time there

You can only do that if you are also an AGHE, I think.
So for most people the answer would be no.

This is only worth considering if you have a Game Dealer willing to take the carcasses. If you don't, and unless you wish to become a butcher and small food business, what's the point as you can only eat and give away so much venison!

As pointed out, you can't buy other folks' deer unless you are a dealer / butcher etc. You can't just buy them, tag them as your own and then sell them to the dealer.
