New Stalking book

Theres always something to learn, or at least make you think what youre doing is still valid or needs changing. For suspended I saw the brisket while the diaphram still holds the rumen then open it up for it all to come through easily, after doing it the other way for a long time. Will give it a good read.
 
Very good book, particularly likes the photos and insight from a slaughterman/professional food processors viewpoint.
