Selling Venison?

Have another look at the 'Hunter's Exemption' rules which would apply to you. Assuming you have the DSC1, you can sell direct, but you need to notify the EHO of your local Authority.
Knowing how pushed they are with men-power and budged it wouldn't surprise me if they never come out to inspect your premises. But you better cover your back.
However I would invest in a fridge suitable to hang a carcass for a few days...and have a HACCP document you can show them. If you PM me with your email address I will send you a suitable document - which another member on this site kindly made available to the forum previously.
 
When I registered, I just sent them an e-mail explaining what I wanted to do, and asking if I could register as a business without having premises, and using an ordinary vehicle. No problem.
I think you only need approved premises if you are selling skinned carcasses or butchered meat.
