Hey folks I've been attempting to learn how to sharpen a knife I purchased a kit from Amazon and I've been attempting to learn my edges and I feel like I'm at the point where I've got a somewhat reasonble angle to the degree I should be able to get a decent edge.
However just from general observation I've noticed that peers sharpen with much lower grits whilst there using diamond grits (I'm using a whetstone) most dont go over #800 on the contrary mines go all the way up to #8000!

Would you guys reckon I ditch the high grits for now and only use the #400 and #1000?

The instructions did mention the #3000 being the sharpening block however I imagine truthfully this is much more of a polishing block than anything and I'm probably stunting myself attempting to use this, At least I've got the muscle memory at least!!
 
If it cuts what you need it to cut, it's doing its job. You can go further and refine the edge but that extra work will be lost quickly as soon as you use the knife. There tends to be a happy medium with knives in terms of the intended application and how long it will last between further visits to the stone. Experience will show you what is best for your needs but sounds like you have broken the back of it. Good work.

Yeah I took another crack at it there and I'm still not entirely happy with it using sharpie and everything on making sure I'm hitting the edge I've got a good bevel. (I feel like) but I cant go from that stage of "It cuts" to it could gralloch several roe prior to being sharpened.

Its an opinel it should sharpen and hold a decent edge for a few deer assuming your not hacking into bone?
