I have a set of water stones but I've never been totally happy about my ability to hold an angle for the whole of a blade. I usually find it particularly hard towards the tip. I found some angle guides on thingiverse that you can attach to the stone with a rubber band and which give you a reference that you can keep returning to while you sharpen. I have found them really useful.
