I like seeing venison in mainstream outlets but not like this. No one would rush to buy a whole lamb if it was lying there in its fleece, half the guts still in it and no where near a fridge. Why do we think it’s “quaint” to see deer handled with such little respect??
I don’t think there's a lack of respect shown there.
Other things may be lacking, certainly.

Good chance the customer will be cooking the meat to above 63°C, we can but hope the carcass doesn’t get left out of the cold store overnight should it be a speculative offering.
 
The temperatures are dropping, both during the day and at night, so this sales technique should be effective for a few months. I doubt anyone will die.
 
Regardless of if people think it’s good to see - having fur on animals next to other meats is asking for trouble in this day and age. There will be all manner of beasties and sh*te on the fur - it’s unavoidable….not something you want on your butchered chops…

On the Faroe Islands you can also get sheep's heads that have been burned with fur on.
Personally, I don't like the smell.

They may indeed be illegal to get into the market, and I can fully understand why, but there is most certainly a market for them here in the U.K.

Yes, there is strong demand for skin-on sheep meat in the UK, hence why NSA has been working hard to find a legal route to market that would benefit UK sheep producers.
