Top sausage recipe!!

for what is worth I've gone over to dried bead crumb which i get from the following;

Found that is gives a softer less grainy texture and seem to hold moisture better. Particularly useful when making high venison content sausages.

I found all stuff from weschenfelder is spot an, an ideal place to start of making sausages. Good support from the team there. in shooting season I buy no end of seasoning of them to stuff boned out pheasants with.

Good recipe, started last year and used this as a 'safe' starting point. I have tried other recipes but always make a batch of these at the same time, so says it all.
I have 30Kg of fore end in the freezer to mince and make a batch, where is everyone buying hog and sheep casings from?
 
Made these sausages the other night, almost to the receipt. Well had to use what I could find, left them hanging in the chiller over night. Damn they smelt good.
made a burger with the leftovers last night. Hot diggity they tasted good. A fantastic first receipe, really impressed.

a few problems.
i used a Muntie, so only ended up with 4 kilos of sausage :cry:
Could I remember how I was taught to keep the sausages at a consistent length and then link the sausages in a chain? Could I xxxx.:cry:
Could I figure how to cut the weird link I ended up with? Not really. :doh:
Did I bust a couple of links using too much force and probably putting too much meat in? Yes
Am I still using a machine stuffer to load the sausage because I haven't got around to buying a decent hand sausage stuffer? Yes.
Is it a pita. Yes.
