Top sausage recipe!!

Hi MS,
Yummy looking sausage recipe and thanks for sharing with everyone. I have checked and found all ingredients in stock so will try this recipe tonight and will share my reviews soon.

had my first attempt at sausage making yesterday and i can agree it was fun wish i had found this recipe before hand ,i did have a look on youtube for a few tips and that helped especially the linking lol .look forward to trying this recipe soon and my lad learned a bit too sure he will have news on mon for his teacher now .
 
Look in the supermarket for the cheap bags which will state contains smoked and unsmoked pieces. Sold as smart price etc.

no links i know of Tom but deer man right

just look for packs of bacon often labelled up our way as either

cooking bacon
ham or smoked ham soup packs
mishape bacon pieces
as name suggests its just a pck like normall bacon vac packs but will be just a pack of different sized lumps and some fatty bits ...just mince it up and use
i found em in tescos Lidl & co-op no probs ....if yer unsure just go in and ask using above "labels" im sure youll get it without too many problems

i use em on smaller batches of burgers and the smoked packs are very good in bunny burgers
tends to be bit cheaper than buying pork belly fae my butcher but not by huge amounts....

whatever burgers or meat im using venison or rabbit meat i usually use around 5lbs of game meat to 1lb or 1 1/2lb of minced bacon packs

I have found that the tesco or asda stuff is little more than a watery mush!
I now use Sainsburys cooking bacon which is solid back fat bacon and probably better than tescos finest!

I've tweaked the amounts over the last couple of batches and now use 12kg Venison and only 4kg of bacon. That puts the fat content about as low as you can realistically go I think! Much better for the more 'portly' stalker and less bacon to buy too! You might need to add a bit of salt though to make up for the lack of it from the extra bacon.

I'm drooling, that sure is a hell of a lot of bacon! I'm planning trying your tweaked 3:1 venison:bacon ration. Cheers for sharing.
