I forgot to say, i got so fatty pork from the butcher, but found bacon bits in Aldi, 59p for a fair sized bag, about a 1lb, doesn't matter some of it is smoked, just adds to the Paprika taste of the chorizo.

Made these the other day there with 3.5lb of Venison mince and 1lb chorizo. 0.5lb onions (blended and fried) and 3 garlic cloves (also blended and fried), 2 tbsp salt 2tbsp pepper and 1tbsp paprika. Absolutely fantastic. threw them into sausages. gorgeous mix. definately will be made again.
