Hears a hint for keeping meat use a marinade place venison in a bowl cover with a liberal amount of ground nut oil or rape seed not olive the flavour is 2 strong add rosemary thyme peppercorns juniper berries and cloves mix it up place in tub with lid top up with oil so the meat is covered it will impart a nice flavour with out over powering and stops the meat oxidising thus prolonging the fridge life by some way

Tried your marinade using some 3/4" thick whitetail steaks but with American adjustments: no juniper berries, added a touch of garlic and cumin. Used peanut oil and seared over close, glowing hickory coals then moved to lesser heat for a few minutes on each side until medium rare. Excellent feast. You're right. No oxidation of the meat. It retained it's color for an entire day of soaking in the fridge. Thanks for the tip.~Muir
