I own both and personally would go Hwv, just that bit easier to train and live with , they want to please and be with you . Nothing at all wrong with the Gwp especially when they calm down and get over the teenage period but at times they can be challenging and you feel the train is moving backwards whereas with the viz it’s the opposite.
my advice is breeds vary immensely via different lineage.
I've seen GWP from different lines that are on both ends of the spectrum however I've never seen a HWV that's too hot and on the edge.

never come across a HWV i would not take home with me but never actually owned one. I have owned GWP and would be very, very unlikely to ever have another.

love my whv ,great to take out stalking ,and will pick up and flush all day ,lovely nature and very intelligent .nothing she wont do .would defiantly have another

I have a Viz x Lab and a pure Viz - Mongrel all the way, use him for deer, birds, rabbits, fox, etc friendliest dog would trust him with anything bar a roast chicken. Pure Viz is a rehome and whilst he does work, he's more of a pet. My best mate has a GWP, it's the softest thing going at home, but crunches birds, has caught and killed Roe and I wouldn't trust it anywhere near livestock
