using a zeiss 2.5 x 15 x 56 with ASV all sighted in correctly on my 243, it shoots faultlessly to 300 yds using the ASV, given that the OP hasn’t given up the preferred distance to shoot, my go to scope would be this one as an exceptional all rounder for all disciplines certainly out to 300 with ease
Schmidt and bender exos is 3-21-50.
SFP, I know all the PRS lot prefer FFP for targets up to 600.
I have a NX8 4-32 on my main stalking rifle , there's 0 need for the magnification available and the light transmission you lose at full power is hilarious. But this was bought at a time when I was going to do PRS ,but somehow I've ended up doing more stalking.
I use a longbow on my 22-250 and it's opened my eyes as to how much you don't need so much mag at all for stalking or vermin.
So,that being said , the nightforce is going and I'm getting either a S&B polar or the exos for a compromise incase I ever want to contort myself over barricades and shoot steel.

Try to find a Zeiss FL 4-16x50 or 6-24X56 superb scopes with illumination, ballistic turret and adj.parallax for an reasonable price.
But if the Op only has a £500 budget he/she needs to make a sensible offer as my priority has changed to that of a funeral plan:

Not a lot of point to the thread if the OP has been scared off by scope prices and people more likely to bash the hell out of each other with their scopes as anything else in the perennial argument about "you don't want one of those on your stalking rifle...oh no, you want one of these!" in which case anyone with a PMII or Nightforce is going to win ( and they can still bash in fence posts and expect them to track well afterwards 
).
With glass, buy once cry once. You can always move it onto another rifle. Only wealthy men can afford cheap glass. Entry level Swaro would be my choice new. Optics may well be acceptable on inexpensive scopes but you can't have everything and mechanicals won't be as repeatable or reliable as on higher quality scopes. Used market will snag some great glass under £1K with rings. That all said, sweepstake on the OP coming back anyone?

I’ve got a Nightforce NSX 3.5-15x50 on my .260 and a 5.5-22 on my .22-250 - top tip, try and get the zero stop, wish I had it.
Not the best at low light but excellent for targets and I've never found it too bad for stalking - plus we are in Scotland, just wait another half hour and turn the lights on!
But I’d honestly say for the money they would be pretty decent all rounders.

Scopes and reticles are a very personal choice.
IMHO the only hard requirements for hunting -and- target in a single scope are:
- illuminated reticle
- reticle with millirad or MoA marked subtensions. No duplex reticles, no BDC reticles
- exposed turrets
FFP makes target shooting at multiple ranges to target (eg steel gongs which have been placed randomly at various distances) much easier than SFP.

HeHehe, I love the S&B PM2 (police and military, mk2) on my 308. The do it all delivery system for anything needing a bullet, from deer to steel plates over a kilometre away. It only weighs a bit over 2lbs though
Seriously however, if you are stalking with this scope, you just set the turret from anywhere from 0.0 to 0.7 mil, depending on if you want a zero at 100 or maximum point blank range, then lock it and don’t mess with it. You don’t need to think about it out stalking. You have time to think about it when using the same rifle for target shooting.
