Had a request for some smoked cheese

Last year I smoked some cheese for my household, as we hosted both days a fair few people tried it and to my delight very much enjoyed it.

This year I had a request from a friend to smoke some for his in-laws, I also had the request from my parents and my in-laws. So got the cheese, just a mix of aldis own medium and mature cheddar.

Decided on a mix of maple dust and cherry dust for the cold smoke and topped it with some dried sage. Gave them 6hours rotating and flipping periodically and the end product has turned out delightful.

The Mrs made a sheppards pie (stalkers pie I suppose) topped with some of the smoked cheese and it really elevated it.

I bet theyre bloody lovely.
Not done cheese yet, cold smoked some garlic which was nice.
I've not tried the garlic will add that to the list, the mature was tested today, its really nice so happy with both. They will be doing the rounds over the next couple of days so hopefully will all be used up!

Well worth a crack if you have something to pop it in for the smoke

Smoked garlic mashed potatoes is very satifying with something like a lamb shank.

I have this offset I built. Not the most efficient but the briskets off it are quality. Will try the cheese.

Nice one, I had an offset smoker previously just a cheap and cheerful one, fitted some fireproof tape around the seals to help with heat and smoke retention just could readily do it as often as I would have liked with it though
 
What are you using as a smoking unit? often thought of doing this but don’t really know where to start for cold smoking.
I used one of the pro-q cold smokers like on link attached. I just put that on the bottom rack of my masterbuilt smoker and let it go.

I did get some fireproof rope but the loose fibres did my nut.
I just accept it isnt very efficient and uses more fuel but it only cost me like £40 to make (grill, handle & hinges)
 
agree cheese is lovely smoked, some other bits you might try, that I’ve had great results with.
Sea salt flakes
Mayonaise
Butter
 
i did a bit last year which turned out a treat, they do look the part, well done that man :thumb:

yep hopefully getting out of hospital today, i’ll find something nice to get me jaw around
Boss has been busy getting some bits together hopefully we should have a parma hock and some purchased smoked cheeses to go with normal gear, believe we’ve got 3 full days of festivities so i should do ok 🙂
